Gluten Free, Low Carb Pizza

Gluten Free, Low Carb Pizza

No Cauliflower Crust Here!

INGREDIENTS

2 tbsp Kraft parmesan cheese
1 tbsp almond flour
1 heaping tablespoon oat bran
1 egg

DIRECTIONS

Combine in a small bowl and spread on a parchment sheet lined pan into circle. Bake for 10 minutes until lightly browned at 350 degrees.
Increase oven to 450 degrees.

Prepare toppings on pizza. Bake for approximately 10 minutes until cheese is bubbly.

Enjoy!

Low Carb, Gluten Free Flatbread

Hamburger bun, sandwich bread or pizza crust!

INGREDIENTS

2 tbsp grated parmesan cheese*
1 tbsp almond flour
1 heaping tablespoon oat bran
1 egg

DIRECTIONS

Combine in a small bowl and spread on a parchment sheet lined pan into 2 small circles for sandwich bread or burger buns; 1 larger circle for pizza crust.

Bake for 10 minutes until lightly browned at 350 degrees.

For pizza:
After baking for ten minutes, add toppings and bake until cheese is bubbly and lightly browned.

*I have used cream cheese instead of parmesan cheese. Worked just as well when I felt like having a PB & J sandwich with parmesan in the bread. lol

Cheeseburger Meatza

 

INGREDIENTS

2 lbs ground beef
2 eggs
1 tbsp garlic powder
1 tbsp dried oregano
1 tsp sea salt

1/4 cup tomato paste or pizza sauce
1/2 pound mushrooms, canned o fresh
2 red ripe tomatoes
1 cup sharp cheddar, shredded
1 cup monteray jack, shredded

DIRECTIONS

Preheat oven to 350 degrees.
Combine beef, spices and eggs. Spread into a 12″ pizza pan.
Top with tomato paste and remaining toppings.
Bake for 45 minutes.

*you may want to put a larger pan underneath to catch drippings.

INGREDIENTS

 

2 1/4 tsp quick rise yeast
2 cups almond flour
1 cup chickpea flour
1 tsp baking powder
1 egg, beaten
1/4 cup warm water

 

DIRECTIONS

 

Preheat oven to 300 degrees.
Combine all ingredient s in a mixing bowl. It will be thick, sticky batter.
Line a 12″ pizza pan with cooking parchment. Place dough on top and top with another layer of parchment. Roll and press dough out to edges of pan.
Bake for 15 minutes.
Put pizza toppings on crust.
Increase oven temperature to 350 degrees. Bake crust with toppings until cheese is melted and slightly browned. Approximately 10-15 minutes.

 

Makes 12″ pizza. 8 slices.

Grain Free Pasta Recipes

Gosh! I’ve been so busy working on my new ebook cook book. It is short but it contains some great grain free pasta and pizza recipes (as well as few other gems). This stuff is so good! I’ve been eating it daily for about 3 months now…. not that I recommend that, but I had to make each recipe umpteen million times to make sure I got it just right. So needless to say, my family and I are ready to eat something besides Italian food for a while. lol

Anyhow, although I’ve been eating pizza and pasta every night, I also haven’t gained a single pound. I would say it’s because this stuff has only half the starch as regular pasta… also, the healthy fat that it contains will also help slow down digestion, making it much lower on the GI scale than regular pasta.

It’s also really filling. I found that I got really full, really fast eating this stuff.

Here’s a nutritional breakdown:

Per 65 gram serving (uncooked)

Calories: 244.0
Total Fat: 12.7 g
Sodium: 82.0 mg
Total Carbs: 25.8 g
Dietary Fiber: 3.2 g
Protein: 7.3 g

So, the ebook should be out before the end of the month. It’s a very short collection of recipes. Less than 20. But I think that they are a gold mine of possibilities and endless variations.

Nope. not another cauliflower crust. lol for this one NO fork and knife are required. The crust stands up to my fairly hefty toppings.

INGREDIENTS

 

8 oz of cream cheese

1 egg

1  1/2 cup almond flour

1 cup ground flax

1/2 tsp sea salt

 

DIRECTIONS

 

Preheat oven to 375 degrees.
In a medium size bowl, cream the cream cheese. Add egg.
Mix in remaining ingredients. The dough will be sticky.
Place dough on a parchment lined pizza baking sheet (mine is about 14″ round). Cover with another piece of parchment and roll out to edges of pie pan. I started with a rolling pan, but I finished it off using my fingers.
Bake in oven for approximately 20-25 minutes until the crust is dry but not too browned.
Remove from oven. Top with traditional pizza toppings (I made a turkey cheeseburger pizza).
Pop it back in the oven for approximately 10 minutes until cheese is gooey. The flash up the broiler for 2-3 minutes to give the cheese a nice golden brown colour.
Serves 8

Chicken, Bacon, Ranch Pizza

Cauliflower Bread

For the toppings I added:

1 slice nitrate free bacon, diced
150 grams diced, chicken breast
1 cup fresh spinach
1/2 cup chopped tomatoes
1//4 cup tomato sauce
1/3 cup mozzarella cheese, grated (30 grams)
1 tbsp yogurt based ranch dressing

I preheated the broiler. Then cooked the bacon in a skillet. Added the chicken. When the meat was cooked through I added the spinach until it had wilted.
Then I assembled the pizza. First the sauce, then the meat mixture. Topped with the tomatoes and cheese.
I put this under the broiler until it was nicely browned. 10 minutes maybe?
Then I drizzled with the ranch dressing.
