Low Carb Peanut Butter Brownies

Only 2.8 grams net carb per square

INGREDIENTS

Brownies

1/2 cup butter, melted
3/4 cup peanut butter
1/4 cup dark cocoa
1 tbsp molasses*
1/3 cup steviva blend*
2 tsp vanilla extract
2 eggs
3/4 cup almond flour
2/3 cup NSA chocolate chips**

Ganache Topping

1/2 cup NSA chocolate chips**
1/4 cup heavy cream
* molasses and steviva blend is used in place of brown sugar sweetener equal to about 2/3 of a cup.

**there is a stevia sweetened dark chocolate available at the Bulk Barn. Coarsely chop it up for NSA chips without using artificial sweeteners.

INSTRUCTIONS

Preheat oven to 350 degrees. Lightly grease a 9×13″ pan.

In a medium bowl, combine all Brownie ingredients and mix well. Spread into pan. bake for 20-25 minutes.
Brownies may seem jiggly but will set upon cooling.

For topping, melt chocolate in a microwave safe dish. Try 20 – 30 seconds at first. When melted, stir in cream and smooth over cooled brownies.

Makes 24 squares.

Now That’s a (Low Carb) Wrap!

Only 7 grams net carbs per large wrap

INGREDIENTS

1/2 cup coconut flour
1/4 cup oil
1/2 tsp sea salt
1/2 tsp baking powder
2 tbsp psyllium husk powder
1 cup hot water

DIRECTIONS

Combine ingredients in a bowl. Stir well until you have a nice dough.
Form into 4 balls. Flatten with rolling pin between 2 sheets of parchment. You can roll this dough out quite thin. I made my wraps about 9 inches in diameter.
Cook on an ungreased, non-stick skillet on medium-low heat for a minute or two. Until it starts to bubble. Flip over for another minute or two.
Store in paper bag.

Makes 4 wraps

Low Carb Double Chocolate Chunk Bar

Mmmm! Delicious! Only 5.5 net carbs per bar!

Bar Ingredients

Chocolate protein powder, 4 scoops (1 1/4 cups)
2 tbsp Flax Seed Meal (ground flax)
1/2 cup cconut milk powder (or low carb milk powder)
1/4 nut butter
Vanilla extract 1 tsp
1 tbsp dark cacao
4 packets stevia (or sweetener of choice)
1/4 + 2 tbsps water

Chocolate Chunks Ingredients

150 grams stevia sweetened chocolate or 2/3 cup  NSA chocolate chips
2 tbsp coconut butter
1 tbsp heavy cream.

 Directions

Make chocolate chunks:
Melt chocolate and coconut butter in a small glass dish. Stir in heavy cream. Chill until hardened. About 1 hour.
Remove from dish and coarsely chop. Set aside.

Spray an 8 inch square pan with non-stick spray. In bowl, whisk together nut butter, water and vanilla. Add remaining ingredients. Add chocolate chunks. Spread into pan and freeze for an hour or refridgerate overnight, until squares can be cut. Keep in airtight container in fridge or wrap individually.

Grain Free Chocolate Sugar Cookies

Only 1.5 net carbs per cookie (excluding add-ins)

INGREDIENTS

1/2 cup butter
3 oz dark chocolate, melted
1/2 cup nut butter
1/2 cup steviva blend (sweetener to equal 1 cup sugar)
pinch sea salt
2 eggs, beaten
1 tsp baking powder
1 cup coconut flour
1 tsp vanilla
1/2 cup “add-ins” (not in nutritional info)
OPTIONAL ADD-INS:
NSA or Dark chocolate chips
walnuts, pecans, etc…
smashed candy cane
marshmallow bits
toffee bits
Chewy dried banana
Dried coconut

 DIRECTIONS

Cream butter. Add nut butter and dark chocolate. Mix well. Add steviva blend. Add eggs. Then add remaining ingredients.
*Add 1/2 cup of “optional” add-ins.*
Roll into a log approximately 2 1/2 inches in diameter and wrap in plastic wrap. Freeze until fairly firm. About 1/2 an hour.
Cut into slices approximately 3/8″ thick and place on parchment lined baking sheet.
Bake at 375 degrees for 8 minutes. Allow to cool before removing from pan.

Makes 30 cookies
