Asparagus & Mushroom Pasta

Chickpea Pasta is the Bomb! Made entirely of chickpeas and lentils. Full of fibre and protein. Yum!

INGREDIENTS

1 cup fresh asparagus
1/2 cup fresh mushrooms, sliced
55 gram (dry weight) Chickpea Pasta* (see below on where to order)
1 tbsp basil pesto
1 tsp Olive Oil
1/2 tbsp Lemon juice
salt & pepper

Gluten Free, Low Carb Pizza

Gluten Free, Low Carb Pizza

No Cauliflower Crust Here!

INGREDIENTS

2 tbsp Kraft parmesan cheese
1 tbsp almond flour
1 heaping tablespoon oat bran
1 egg

DIRECTIONS

Combine in a small bowl and spread on a parchment sheet lined pan into circle. Bake for 10 minutes until lightly browned at 350 degrees.
Increase oven to 450 degrees.

Prepare toppings on pizza. Bake for approximately 10 minutes until cheese is bubbly.

Enjoy!

Low Carb Shrimp Fettuccine for One

Only 8 grams net carb per serving including noodles

INGREDIENTS

1 tbsp butter
175 grams shrimp
1/4 cup red pepper, chopped
2 tbsp cream cheese
2 tbsp heavy cream
1/2 tsp crushed garlic
1 tbsp parmesan cheese
50 grams Explore Asian Mung Bean Fettuccine

 

DIRECTIONS

Cook fettuccine.

Meanwhile,
melt butter in skillet over medium high heat. Cook shrimp. Add peppers and cook until softened. Add garlic.
Stir in cream cheese. Add cream and parmesan.
Toss with hot drained noodles.

Serves 1 – 2

Grain Free Pasta with Italian Sausage

Grain Free Flax Pasta

INGREDIENTS

Sauce

1 28 oz can tomato sauce

1 28 oz can diced tomatoes

1 tbsp fresh basil

1 tbsp lemon juice

2 tbsp brown sugar

1 tsp red pepper flakes

1 tsp crushed garlic

1 tbsp olive oil

salt & pepper to taste

1 1/2 lb Italian sausage

1/4 cup grated parmigiano (yes. it goes INTO the sauce)

Pasta

2 cups almond flour

1 cup arrowroot starch

1 cup ground golden flax

1/4 tsp xanthan gum (optional)

4 eggs

extra arrowroot for rolling

DIRECTIONS

Sauce: Heat oil and brown sausage (you can remove casings or simply cut into meatball size pieces like I did. Add remaining ingredients. Simmer for several hours. I like to start mine cooking before lunch.

Pasta: 

In a large bowl, combine dry ingredients. Make a well in centre and add eggs. Beat eggs with a fork and gradually add in the dry ingredients. You will eventually want to use your hands to form a soft dough. Gently knead until smooth.

Dough can be rolled out, on a liberally dusted surface, to approximately 1/12th of an inch and cut into strips as for spaghetti, linguini, fettucine, ravioli or lasagne. The dough is a little more fragile than regular pasta dough. You will want to avoid rolling it out twice

Drop into boiling water and boil for barely one minute. Strain.

Serve: Top with the Sausage sauce and freshly grated parmigiano cheese

Serves 4-6 as an entree, 8 as a side dish

Grain Free Pasta Recipes

Gosh! I’ve been so busy working on my new ebook cook book. It is short but it contains some great grain free pasta and pizza recipes (as well as few other gems). This stuff is so good! I’ve been eating it daily for about 3 months now…. not that I recommend that, but I had to make each recipe umpteen million times to make sure I got it just right. So needless to say, my family and I are ready to eat something besides Italian food for a while. lol

Anyhow, although I’ve been eating pizza and pasta every night, I also haven’t gained a single pound. I would say it’s because this stuff has only half the starch as regular pasta… also, the healthy fat that it contains will also help slow down digestion, making it much lower on the GI scale than regular pasta.

It’s also really filling. I found that I got really full, really fast eating this stuff.

Here’s a nutritional breakdown:

Per 65 gram serving (uncooked)

Calories: 244.0
Total Fat: 12.7 g
Sodium: 82.0 mg
Total Carbs: 25.8 g
Dietary Fiber: 3.2 g
Protein: 7.3 g

So, the ebook should be out before the end of the month. It’s a very short collection of recipes. Less than 20. But I think that they are a gold mine of possibilities and endless variations.
