No Butter Chicken with Vegetables

I LIED. There’s a TEENY BIT of Butter in this recipe. Serve over Riced Cauliflower, basmati or with whole wheat Naan. Delicious!

INGREDIENTS

3 chicken breasts, cooked & cubed

1 tbsp cooking oil

1 small onion, diced

1 red pepper, diced

1/2 lb mushrooms

1/2 cup frozen spinach, thawed

4 tsp garam masala

1 tsp ginger

1 tsp curry powder

2 tbsp dark brown sugar

1 1/2 tsp salt

1 1/2 tsp black pepper

1 can lite coconut milk

1 small can tomato paste

*optional: 1-2 tbsp butter

*optional: 2 tbsp flour (to make sauce thicker). Whisk it in with the spices

DIRECTIONS

Heat oil in large saucepan over medium high heat. Add vegetables and stir fry until cooked. Add cooked chicken. Stir in coconut milk and tomato paste. Whisk in spices. If you like your sauce a bit thicker whisk in optional flour. I like to stir in 1-2 tbsps of butter for a bit of flavour at the end.

Enjoy on top of basmati rice or riced cauliflower.

    YUM! This looks so good and healthy too. I think it would work great for my next potluck gathering.
