Chewy Apricot Oat Bars

Chewy Apricot Oat Bars

 

Can be made with any combination of dried fruit and preserves.

Could also be make with chocolate chips and mini marshmallows…

 

Ingredients
1 1/2 cup quick-cooking rolled oats
1 1/2 cup all-purpose flour
1 cup xylitol
1 tbsp molasses
1/2 teaspoon salt
1 teaspoon baking soda
6 tbsp butter, melted
3 tablespoons milk, water or juice
1 cup fruit preserves
20 dried apricots, diced
*1 cup packed brown sugar can be used instead of xylitol and molasses

 

Preheat oven to 325 degrees.
Lightly grease a 9×11″ pan.
Combine all ingredients except apricots and preserves. Mixture should hold together when pressed into a ball.
Use 2/3 of mixture and press into bottom of pan.
Combine dried fruit and preserves. Spread over oatmeal mixture.
Sprinkle remaining oat mixture over preserves.
Bake for 30 minutes. Allow to cool, then chill until firm.

Makes 24 squares

INGREDIENTS

1/2 steviva blend or 1 cup xylitol, Swerve or sweetener to egual 1 cup sugar
1/2 cup brown sugar, not packed
1 cup unsweetened applesauce
1/2 cup butter, softened
1 egg
2 egg whites
2 tbsp agave nectar
2 tsp vanilla extract
2 1/2 cups whole wheat flour
1 1/2 cups spelt flour

2 tsp baking powder

1 cup almond flour
1/3 cup coconut flour

Grain Free Chocolate Sugar Cookies

Grain Free Chocolate Sugar Cookies

Only 1.5 net carbs per cookie (excluding add-ins)

INGREDIENTS

1/2 cup butter
3 oz dark chocolate, melted
1/2 cup nut butter
1/2 cup steviva blend (sweetener to equal 1 cup sugar)
pinch sea salt
2 eggs, beaten
1 tsp baking powder
1 cup coconut flour
1 tsp vanilla
1/2 cup “add-ins” (not in nutritional info)
OPTIONAL ADD-INS:
NSA or Dark chocolate chips
walnuts, pecans, etc…
smashed candy cane
marshmallow bits
toffee bits
Chewy dried banana
Dried coconut

 DIRECTIONS

Cream butter. Add nut butter and dark chocolate. Mix well. Add steviva blend. Add eggs. Then add remaining ingredients.
*Add 1/2 cup of “optional” add-ins.*
Roll into a log approximately 2 1/2 inches in diameter and wrap in plastic wrap. Freeze until fairly firm. About 1/2 an hour.
Cut into slices approximately 3/8″ thick and place on parchment lined baking sheet.
Bake at 375 degrees for 8 minutes. Allow to cool before removing from pan.

Makes 30 cookies
