Double Chocolate Chip Protein Cookies

Makes a great Breakfast Cookie


1 cup light brown Truvia
3/4 cup butter, softened
1 tsp sea salt
4 large eggs
1 tbsp baking soda
1/2 tbsp vanilla
2 1/2 cups chocolate when protein powder
6 tbsp cocoa powder
1 cup almond flour
1 cup oat bran
1/2 cup coconut flour
1/2 cup dark chocolate chips
1/2 cup chopped walnuts


preheat oven to 350 degrees. Line baking sheet with parchment paper.

In a mixer, cream butter. Add Truvia, then eggs. Mix well. Add the rest of the ingredients and mix just until combined. Do not overtax.
Place large spoonfuls onto baking sheet and flatten slightly.

Bake for 10 minutes and allow to cool on the pan.

Makes 35 LARGE cookies; can easily be made smaller and double the batch. You will have to adjust your cooking time.
