Carrot Cake Cookies

Healthy Enough to Have for Breakfast!

INGREDIENTS

1 cup quick oats
3/4 cup spelt flour
2 tbsp melted butter
1 large egg, beaten
1/2 cup honey
1/3 cup chopped pecans
3/4 cup grated carrot
1/2 cup raisins
1 1/2 tsp baking powder
1 1/2 tsp cinnamon
1/2 tsp salt

DIRECTIONS

Mix everything together. Drop spoonfuls onto a parchment lined baking sheet.
Bake at 325 degrees for 15 minutes.
