Low Carb Coconut Macaroons

 

INGREDIENTS

 

COOKIES
2 3/4 cups unsweetened, shredded coconut
1/3 – 1/2 cup steviva blend (or 2/3 cup sugar)
1 tbsp coconut flour
1/4 tsp sea salt
3 egg whites
1/4 tsp almond extract

TOPPING
100 grams dark chocolate
1 tsp butter

 

DIRECTIONS

Preheat oven to 325 degrees.
Line a baking sheet with parchment paper. Combine all the cookie ingredients in a bowl. Drop large spoonfuls onto the lined cookie sheet.
Bake for 20 minutes. Cookies should be slightly browned at the edges.

Allow to cool

Melt chocolate with butter. Drizzle over the cookies.

ENJOY!

    Yum, these look wonderful and I think I have all the ingredients on hand to make these as long as it’s not too hot to run the oven. Thanks.
