INGREDIENTS
1 medium size head of cauliflower
6 slices bacon, cooked, chopped
4 tbsp cream cheese
1/4 cup parmesan cheese
2 tbsp butter
1 tsp crushed garlic
2 tbsp finely chopped chives
salt & pepper to taste
DIRECTIONS
Steam cauliflower. While still hot, put all ingredients except the bacon and chives into a food processor. Puree until smooth.
Mix in chives and bacon. Serve.

OH MY! What a good idea!
Laura, you really did a good one with this. I’m eating it right now. YUMMY! I think 2 tablespoons of chopped chives is too much for me–pretty spicy. Maybe I just got some pungent chives! But this is a winner for sure. I’ve had mashed cauliflower before but never was greatly impressed; I mean, it was just okay. Adding the bacon and cheese is what puts it way over the edge into fabulous. thanks
