Sweet Potato Latkes

Baked, then fried.

Much lower in fat and healthier than regular latkes



1 tbsp Olive Oil
1 large sweet potato (mine was 350 grams)
3 tbsp cup spelt flour
2 eggs
1/3 cup chopped green onion
1/2 tsp powdered garlic
salt & pepper to taste


Preheat oven to 400 degrees.
Peel sweet potato. Grate potato. Place potato into a clean tea toel. Squeeze out as much water as you can. Place shredded potato into a bowl. Add remaining ingredients.
On a parchment lined cookie sheet, form 6 latkes.
Bake for 15 minutes on each side.
Heat oil on high in a pan. Fry the latkes until they are crisp on the edges.
Enjoy with sour cream or anything else you like!
