Always Ready Bran Muffins

“Always Ready” adapted from “Ever Ready” Clean Eating Cookbook recipe. Always have a fresh muffin on hand for company, snacks, lunches, etc.


Dry Ingredients
4 cups spelt (or whole grain flour of choice)
4 tsp Baking Soda
4 cup wheat bran
4 cups raisins
1 tsp sea salt

Wet Ingredients
2 large eggs, lightly beaten
1 cup honey, or maple syrup
1 1/2 cups unsweetened applesauce
4 cup almond milk with 4 tbsp lemon juice added and allowed to sit for 10 minutes


Preheat oven to 425 degrees.
Line muffin tin with paper liners.
Combine dry ingredients in a large mixing bowl
Add wet ingredients and mix just until combined.
Fill each tin 3/4 full.
Remaining batter may be stored for up to 2 weeks in a airtight container in fridge. Use for lunches, company, snacks or breakfasts as the need arises for fresh baked muffins (thus the name “always ready”
Bake for 15 minutes

Makes 48 muffins
