Grain Free Apple Pie Muffins
2 cups small diced apple
1/3 cup water
1 tsp cinnamon
1/4 cup Truvia or sweetener that equals 1 cup sugar
2 tsp cornstarch
1/2 cup applesauce
1/2 cup milk of choice (I used almond milk)
1/3 cup vanilla whey protein
2 cups cashews
1 tsp baking powder
1/4 tsp salt
1/3 – 1/2 cup sugar (Truvia is twice as sweet as sugar)
Preheat oven to 350 degrees.
In a small saucepan, put in all the filling ingredients except the cornstarch. Cook over medium heat for just a few minutes until apples are just tender. Whisk in the cornstarch. You can dissolve the cornstarch in a bit of water first if you like, but I just quickly whisked it in. Mixture should thicken almost right away. Set aside
Place all the muffing ingredients in Ninja or Magic Bullet. Process until smooth. Spoon out 2/3 of the mixture into 12 parchment lined muffin cups.
Spoon filling into cups, then top with remains batter mixture.
Bake for 20 minutes.
