Italian Dressing

“Mmmm! Clean homemade Italian Dressing!”

INGREDIENTS

1/2 cup olive oil
6 tbsp apple cider vinegar
2 large egg yolks
1 tsp lemon juice
1 tbsp parmesan cheese
3/4 tsp garlic powder
3/4 tsp ground basil
3/4 tsp ground oregano
1/4 tsp salt
pinch red pepper flakes

DIRECTIONS

Put all ingredients in a small blender, or whisk with a fork. Enjoy!

Serving Size: makes 16 servings. 1 tbsp each

        This is another delicious way to use up duck eggs. I don’t have any great ideas on how to use the left over whites. Can you think of any? Meringue cookies come to mind but ACK! so much sugar! I wonder if using one whole egg in this dressing would work. I don’t think it would be quite as rich and warm tasting though.
