Carrot Cake Muffins

Grain Free Carrot Cake Muffins. Perfect before your morning workout or Easter morning breakfast

INGREDIENTS

1/4 cup heavy cream
1/4 cup water
3 eggs
1/3 cup vanilla whey protein powder
1/2 cup honey or maple syrup (or nsa syrup)*
1 tsp baking powder
1/4 tsp salt
1 3/4 cups finely ground cashews
2 tbsp coconut flour
3/4 cup raisins
3/4 cup chopped pecans

DIRECTIONS

Preheat oven to 350 degrees. Line 12 muffin tins with paper or foil liners.

Combine all ingredients in a food processor, except nuts and raisins. Add remaining ingredients.
Spoon into prepared muffin cups.
Bake for 20 minutes.

Makes 12 muffins

*no sugar added syrups are available all over the world. Using natural sweeteners such as stevia, erythritol, xylitol, yacon syrup, monk fruit will significantly reduce calories and carbohydrate intake.
