No Bake Strawberry Cream Pie

Even with a traditional pastry crust this pie still has only 8 grams total carbs per serving.


1 ready made, baked pie shell
1 cup softened cream cheese
1 cup heavy cream
1 envelope unflavoured gelatin
1 cup fresh strawberries. mashed
1 cup sweetener of choice ( I used a stevia/erythritol blend)


Put gelatine into a small bowl. Add 1/4 cup boiling water and stir. Set aside.
Using a hand blender, whip cream cheese. Add sweetener. Slowly add cream. Then add the mashed strawberries and gelatin.
Pour into pie shell. Chill until set. At least 2 hours.

Serving Size: makes 12 pieces
