Tangy Avocado Mayonnaise

I put this SH@T on everything!

INGREDIENTS

1 whole avocado
1/4 tsp lemon juice
1/2 cup Greek yogurt
1 egg yolk
1 tbsp white vinegar
1/2 tsp sweetener
1/2 tsp salt

DIRECTIONS

Blend in blender, food processor or use an immersion blender.

Makes about 1 cup.

1 tbsp serving; 16 servings

    This sounds really good. How long will it keep in the fridge, or should it all be used when it’s made? If saved for later use, will it turn dark colored because of the avocado? Thank you for sharing.

      Thanks Kelly! It will keep a day or two in the fridge. I made some yesterday and today it has turned slightly darker. But I will want to use it up by tomorrow. It’s so yummy! That it shouldn’t be a problem.
