Pumpkin Spice Donuts with Caramel Glaze, Grain Free INGREDIENTS 1 cup coconut flour 2 tbsp sweetener of choice (equals 1 tbsp sugar) 1 1/3 tbsp baking powder 1/4 cup whey protein powder 1/2 tsp xanthan gum 1 tbsp ground cinnamon 1/2 tsp nutmeg pinch cloves 4 eggs 1 cup canned pumpkin 2 tbsp melted butter oil for frying 1/2 recipe Caramel Sauce *allow sauce to sit and chill in fridge to thicken. About 1/2 an hour.

DIRECTIONS Combine Dry Ingredients in a bowl. Add wet ingredients and mix. Let stand for a few minutes. Roll out between 2 pieces of parchment to thickness of about 1/2″. Use a doughnut cutter to cut out the dough. You can re-roll the leftover bits since this dough has no gluten it won’t get tough. Heat oil to 375 degrees. Carefully place donuts in oil and deep fry for about 1 minutes on each side. Allow to dry on paper towels. Drizzle with cooled caramel sauce.
