Perfect Low Carb, Reduced Sugar, Chocolate Cupcakes

 

Cupcakes have 2.5 grams net carbs without the frosting.

 

 

 

CUPCAKES

INGREDIENTS

1/2 cup unsweetened applesauce
1/4 cup heavy cream
1/4 cup water
4 eggs
2 cups finely ground almond flour
1/3 cup vanilla whey protein powder
1/4 cup dark cacao
1 tsp baking powder
1/4 tsp salt
1 1/4 cups stevia in the raw blend (or sweetener to equal 1 1/4 cups sugar)

DIRECTIONS

Preheat oven to 350 degrees. Line 12 muffin tins with paper or foil liners.

Combine all ingredients and mix with hand mixer for 1-2 minutes.
Spoon into prepared muffin cups.
Bake for 25 – 30 minutes.
Allow to cool completely

FROSTING

INGREDIENTS

2 squares unsweetened chocolate
1/2 cup butter, softened
1/4 cup Stevia in the Raw blend
1/3 cup heavy cream
1/3 cup icing sugar (optional. Makes a nicer texture for the frosting. I use on special occasions and omit for  an informal family dessert)

DIRECTIONS

Melt chocolate in glass bowl in microwave. Mix in the Stevia in the raw. Using a hand mixer, add the butter, cream and icing sugar. Should be a nice consistency to use in a piping bag. If not using the icing sugar, then chill so that the frosting gets a stiffer consistency.
You will want to keep iced cakes in the refrigerator.

Will frost 12 cupcakes or one 8×8″ cake

    I’m going to try these this week!! Thanks! I’ll let you know how they turn out. I am going to try cutting the sugar in half using coconut sugar or xylitol. And I’m not making the icing until we have a special occasion! :o)
