Broccoli, Cheddar Bacon Casserole

 

INGREDIENTS

1 large head of broccoli, cut into small florets
2 cups grated sharp cheddar
2 tbsp butter
1/2 cup cream cheese
1 cup heavy cream
2 cloves crushed garlic
1/4 cup crumbled bacon
1/2 tsp white pepper
salt to taste
1/4 cup grated parmigiano cheese (for on top)

 

DIRECTIONS

Preheat oven to 375 degrees.
Grease a medium size casserole dish, or square baking pan.
Steam broccoli (approx 4 minutes). Put into dish. Sprinkle crumbled bacon over top.
Make cheese sauce:
Melt butter and cream cheese in a saucepan over medium heat. Whisk in the cream, garlic, salt and pepper.
Add grated cheddar. Stir until melted.
Pour over broccoli. Sprinkle with parmigiano.
Bake for 30 minutes until cheese is bubbly.

    My kind of casserole–YUM! Did it turn out a bit loose? Meaning “runny”? Or did it set up nice without being dry? I was just thinking about including an egg but maybe it would set up too much. What do you think? More good fat and good cholesterol anyway.

      It wasn’t too runny at all. You could try an egg. I don’t think it needs it though. Personal preference maybe.

        I’ll do it your original way first. Looks like the kind of meal even my dh would like. For him I might serve it with rice or noodles. Maybe this would be a nice accompaniment to your arrowroot/almond meal noodles. If it’s extra moist then all the better, eh?

    I love the recipes I see, but why can I not print them? I have tried everything and it just won’t do it?

      Hi Mary. I know. It is frustrating for me also. I’m trying to figure out how to print the recipes without copy and pasting them into a text program. I’m not very good with website “mechanics”

        Thank you for your prompt response. I went ahead and copied it to Word and deleted the picture. That way, I got it all on one page. Would have liked to have the picture. Thanks again!
