This is a recipe that will be in my new cookbook. I hope to have it electronically published before the end of the month.
Chocolate Almond Biscotti
2 cups almond flour
1/4 cup coconut flour
1/4 cup dark cacao powder
1/4 tsp salt
1/2 tsp baking soda
2 eggs
1/4 cup coconut oil
1/3 cup steviva blend
1/2 cup slivered almonds
1/2 cup dark chocolate chips
Preheat oven to 325 degrees.
Place all ingredients into a bowl of a stand mixer. Mix until dough forms a ball. Form a log on a parchment lined baking sheet. Log should be about 1ā high.
Bake for 25 minutes. Remove from oven and allow to cool completely.
Cut into 1/2ā slices and place cut sides up back onto lined baking sheet. Bake for another 20 minutes at 325, turning once halfway through.
Remove from oven. Allow to cool. You may want to dip into melted dark or white chocolate.
Makes 16-18 cookies


This looks great; I’ll have to try it. Will it work to use less Steviva Blend? Erythritol always leaves a funny taste in my mouth but maybe with less in the recipe I wouldn’t notice it so much. What do you think? You are continually amazing!
If you want, you can use honey or maple syrup or regular sugar. Try 1/2 cup regular sugar….
